Cabinet Door Uses Part I

A month ago I came into a giant loot of cabinet doors. My Aunt and Uncle bought a house from a guy that made custom cabinetry and left behind dozens of doors! So, she said I can have as many as I want, which of course the hoarder in me squealed with joy. I have several projects that I have been working on with these, some to sell at a craft fair I'm doing this fall and some just for fun.

Here is one that is a very easy and fast project. Add handles to the sides of your cabinet door to make a serving tray.

We live outside during the summer and carting all our plates, silverware, and condiments outside gets a little waring as you have to make several trips in and out. So, we use a big door with handles and can carry everything out at once.

How simple and fun is that?! You can always paint it and make it festive if you want, but I loved the finish on this one and the size made it perfect!

My Little Monster Monday and a Recipe

(This is not my child, but the idea has merit.)

I just had to share what my weekend was like with my little monster. Now, I remind you again, I love my children, but one of them is testing my patience so much that I am thinking of duct taping him to the walls.

*Used a pen and colored all over our electric bill. I really hope the person that opens it has a sense of humor.
*Ate a heart shaped bead. No hesitation, no regrets, just popped it in like a candy.
*Colored on the walls with chalk. Luckily, after finding the last "artistic display" I hid all the markers from him, so chalk was all he could find.
*Covered our entertainment center, ottoman, and movie tower with an entire bottle of aerosol hair spray. Apparently, the frizz needed to be controlled on our furniture.
*Opened my face moisturizer/primer tube and squeezed it all over the bathroom floor, his head, hands and shirt. He has a wonderful white patch on his hair that makes him look like the kid on "The Sixth Sense".

So that is why I didn't get much done this weekend, as I had to chase and clean up after a little man who has taken it upon himself to throw my diet out the window as I need chocolate and chips to steady my nerves.

Now, onto the recipe.
When I was pregnant with my son, I worked in an office that was across the street from a Starbucks and this bbq place called Smoky Joe's. It was HEAVEN!!!! They made great money from me as I would order their Pulled Pork and Pulled Chicken sandwiches. It came with a side of coleslaw and a piece of warm corn bread. AMAZING!!! Unfortunately, it went out of business after my son was born... hmmmm, maybe it would have stayed in business longer if I had the gestational period of an elephant (which is 18 months.) Any hoo, I have been searching for a replacement for those sandwiches and have not found anything that came close. Well, here it is! SO GOOD!!!! Plus it is so dang easy to make, your mother-in-law will think you are a culinary genius!

Crock Pot Pulled BBQ Chicken Sandwiches

Ingredients:
3-4 Frozen Chicken Breasts (I used 3 really big ones, but if yours are small, add more.)
1 Regular sized bottle of BBQ Sauce of your choice (I have used a few different flavors now and it always tastes good!)
Juice from 1 Orange

Dump all items into your crock pot. Doesn't need to be pretty.
Cook on Low for 8 hours or on High for 4.
After it's done cooking take two forks and shred your chicken up in the crock pot.
Serve on a toasted Hoagie bun and top with a slice of cheese (we used Havarti as it's what we had on hand, but anything would work.) Enjoy!

SEE?!!!! Stupid easy and I kid you not it is the best sandwich ever!!!!!!

Dinosaur Cake

Yeah, yeah, I know. Still no apron. Just haven't been able to drag the sewing machine out lately.

My mom kind of hired me out to a co-worker of hers to make her 2 year old daughter's birthday cake. Now the last cake I made I had TONS of help with! I really didn't do a whole lot for that cake, but my mother thought I needed to venture out and make a cake for someone else. I knew it would be good practice for the cake I would be making for my daughter's birthday in April, so I took the "job." I was so nervous but I did lots of research and had a design in mind for this cake and I also drew it out as to how I was going to put it all together.

Here is the finished product.

As you can see at the bottom of the frill there was a little bit of a "Rookie Mistake" in the wrinkles, but that was really the only spot that didn't look right.
The body and tail are made from a German Chocolate cake mix and the frill, head and legs are rice crispies. The last cake I made, I used store bought buttercream frosting, but this time I made the frosting and it was AMAZING!!!!! I just Googled "Buttercream Icing" and found this link. It was crazy easy to make and tasted so good!
The bow on the top is a real piece of ribbon as I didn't have any pink fondant. The whole cake is covered by the Duff Brand Fondant from Michaels. It tastes good and is easy to use.

Little Man Turned 2

Have you ever looked at your kids, knowing they aren't babies anymore, but you can still see a little glimmer of their baby selves? Well, I have been searching for that with my kids lately and what makes it harder is that my baby boy Cooper turned 2 on Friday. I know he's getting bigger, but is it so wrong to want to shrink him down to be my baby again?

Well, in true Kelsee fashion, I wanted to do a big fun thing for the little man. And due to the fact that his birthday is so close after the holidays, I waited until the last minute to do everything... again, in true Kelsee fashion. So I enlisted the help of my dear friend Chelsea from Reese's Pieces and Me to come and teach me the art of cake decorating! Ok, it wasn't so much as enlisting her help, it was bribing her with an apron and begging a bit. So she was kind enough to come over and help me, and by help I mean she did the majority of the hard things and I looked on in awe of her mad skills.
She found a great picture someone did of a tire cake with a monster truck on it, which was my original theme for the party. However, after getting "Cars" the movie for Christmas, the Lightning McQueen obsession started and I quickly changed the theme. But the tire was the same. We used the Duff brand fondant frosting, which actually doesn't taste too bad. I made a pound cake using this recipe that my mother-in-law sent me and has been using for years. It turned out really nice!
Pound Cake

6 eggs
1 cup cold butter
8 oz cream cheese, cold and cut up in small pieces
2 3/4 c sugar
1 tablespoon kosher salt
4 teaspoons vanilla
3 cups sifted cake flour


Let eggs stand at room temperature for 30 minutes or until at room temperature. Generously butter and flour either 2 loaf pans or 1 bundt pan. Beat cold butter approximately 2 minutes on low speed, add cream cheese, beat on low 3 minutes (until waxy and well blended). While still mixing add sugar in slow continuous stream. Add salt. Continue creaming for 5 minutes (scrap sides of mixer bowl halfway through). Increase mixing speed to medium, continue 2 minutes more. Add eggs, one at a time, beating 20 to 30 seconds after each egg. Beat vanilla in with last egg. Gradually add 2 1/2 cups flour on low speed, mixing until just blended. Turn off mixer. Fold in rest of flour just until combined. Turn batter into prepared pans, shake and drop pan on counter to release air bubbles. Place on center rack of cold oven. Turn oven to 300 degrees. Bake for 1 hour and 15 minutes to 1 1/2 hours without opening oven door. Test for doneness. Transfer to cooling rack, cool for 10 minutes before removing.

*1 hour and 45 min for bunt pan

I loved the "Cooper's Tires" on there. Our little Cooper couldn't read it, but it was fun to see it anyway.

The best part about the cake was the kids excitement when the black fondant turned their tongues black.

Another fun thing I did for each of the kids was we made cars for each of them out of diaper boxes. We covered them in packing paper, cut out the bottoms, spray painted the backs of paper plates black, glued white paper in the centers and then secured the plates to the boxes with paper brads.
I got a bunch of stickers, got out the crayons and let the kids decorate their own cars.
They had so much fun!

Rice Pudding and an Announcement

I rarely put recipes on here, because as I have stated before, not the best cook in the world. However, when I do find something that even I can make and it doesn't taste like a science project, I like to share said recipe with all of you! My husband decided to make this one day and I ate the entire pot all by my lonesome... I'm not lying. Gone. All of it. I even used a spatula and scraped the bottom of the pot just to get every last bit of it!

Creamy Rice Pudding
Ingredients
3/4 Cup Uncooked White Rice
2 Cups Milk, divided
1/2 Cup White Sugar
1/4 Teaspoon Salt
1 Egg, beaten
1 Tablespoon Butter
1/2 Teaspoon Vanilla Extract

Directions
1. In a medium saucepan, bring 1 1/2 cups water to a boil. Add rice and stir. Reduce heat, cover and simmer for 20 minutes.
2. In another saucepan, combine 1 1/2 cups rice, 1 1/2 cups milk, sugar and salt. Cook over medium heat until thick and creamy, 15-20 minutes. Stir in remaining 1/2 cup milk and beaten egg. Cook 2 minutes more, stirring constantly. Remove from heat, stir in butter and vanilla.

Now, you can serve warm, but I like it cold! You can also add 2/3 cup Golden Raisins to it too, but that is not my cup of tea, so I left it out. But if you like that you just add it in with the egg and extra milk. Its so good to sprinkle just a bit of cinnamon on top or do a nice swirl of Redi-Whip (and of course do a squirt in your mouth before putting it away, its mandatory!) And I wonder why I have a weight problem... hmmm. Hope you enjoy!

And also, I will resume my more fun posts hopefully by the end of next week as I am stressed to the max with my daughter's 3rd birthday party crafts. I'll post all my fun things I've been making hopefully before then, if not after Easter. I just need to take deep breaths, have yet another bowl of Rice Pudding and make it through this week without a trip to my favorite closet and hiding.

Baby Boy's 1st Birthday


So, my little man turned 1 last week. *Sniff* And he's walking. *Gulp!* So I had to do a special little birthday party for him. I decided months ago to do a "Construction Theme" party. There was nothing that I could find locally that was construction themed, so I had to get a little creative. Sorry for the lack of pictures, but I wrapped the doors and windows in "CAUTION" tape that you can find at Lowes. I also made signs that said: "CAUTION SUGAR OVERLOAD OCCURRING" and "DANGER STICKY FINGERS" and "CAUTION KIDS AT WORK". It was pretty cute. I also wanted to make these fun cakes that I found from Parenting.com, the same site that I used to make the purse cake. Here's the link for all 31 fun cakes!

The recipe for both called for frozen pound cakes, but as I don't like pound cakes I just used yellow cake mixes that I already had. I had to alter the directions a bit, but not too much. Just the size was off. The dump truck was supposed to be red... but it turned out brown. Here's a fun little story for you. I can laugh about it now but last week I was a little ticked off at myself! Lol I had red food coloring and vanilla frosting. So I added the red coloring to the frosting and it turned pink. No problem, I thought, I'll just add more. Well after that ENTIRE bottle was empty, and it was still pink, I then thought, well I have yellow so I can just make orange frosting. That would work? Right? After that ENTIRE bottle of yellow the frosting was a wonderful shade of salmon. I CAN'T have a SALMON cake for my little BOYS BIRTHDAY!!!!!! That is one of those things that will seriously damage him! (Which he really wouldn't have cared, I think I was just a little frantic and didn't have enough stuff to make more.) So I freaked out and sent the hubs to the store at 10:30 at night. I told him to look for frosting pigment, the paste that makes the deeper colors. What does he bring? Food coloring. Well, I just had to make it work. So I added the second bottle of red and the other new bottle of yellow only making it a more rich color of salmon. At this point I am... well pissed off! Sorry for the language, but it was a disaster and I knew I wouldn't be able to con my husband into another trip to the store to get me more frosting so I could start over. After a few "mad scientist" concoctions, I ended up with a purply- brown that you could only tell if you had it under a really bright light. Deep breaths. Just thinking about it is making my blood pressure rise! So the moral of this story is to get the paste stuff FIRST, then proceed with the directions!

Italian Beef Sandwiches

I don't know if I have expressed my profound love for my crock pot to you all. My husband got it for me for my birthday last year and received many jabs about it. Who wants an appliance for their birthday? I mean really? ME!!!! Not only do I love it, but its red, my favorite color. As a stay at home mom of 2 little ones, dinner seems like such a difficult task. I don't know about you, but by about 4:00 I am running out of steam and need to lock myself in a closet. So dinner is usually as easy and quick as I can make it. So my crock pot has become my best friend.

This recipe was sent about a year ago from a friend of my sister-in-law's, so I don't know where she got it, but whoever created it needs to be given an award! Its by far the best dang sandwich I have ever had!!! Here goes:

Italian Beef Sandwich:
2 cans beef broth
1 teaspoon black pepper
1 teaspoon oregano
1 teaspoon basil
1 teaspoon onion powder
1 teaspoon dried parsley (optional)
1 teaspoon garlic powder
2 .7 oz packages of dry Italian salad dressing mix
3 to 5 lb chuck roast
Combine all ingredients except roast in a saucepan. Stir well and bring to a boil
Place roast in crock pot and pour mixture over the meat. Cover and cook on low
for 8 to 10 hours or on high for 4 to 5 hours (depending on your crockpot). About
30 minutes before serving, take meat out and shred with a fork, return to juices in
crock pot and let it get hot before serving.
To serve:
for sandwiches I take hoagie rolls, butter lightly and toast under a low broiler
for just a few minutes till bread is lightly brown....add meat and top with a slice of
provolone or mozzarella cheese and return to broiler just till cheese begins to melt.
You can add sauteed mushrooms and or onions, peppers...whatever floats your boat!
This meat mixture is also excellent served with mashed potatoes..but just don't shred
the meat...serve it like you would a roast.
*Can be a tad salty so if you want use low sodium beef broth.

Let me just reiterate how delicious this is!!!! You will not be disappointed in any way! (Sorry for no pictures, we ate them too fast. Lol)

Best Soup Of the Season!

I am sharing this recipe from Tracy over at Wet Oatmeal Kisses I was so stinkin' excited about it, that the second I saw the recipe I sent the husband a text message to get the stuff we needed. Let me tell you, this was HEAVEN! So good, hearty and healthy... unless you do like me and make homemade cornbread with it and slather it with butter and honey. Then, not so healthy. But I figure after the day I had yesterday (which included cleaning up numerous accidents from my potty training daughter, shutting my 8 month old son's finger in the door and making him bleed, I cried longer than he did. Rescuing my sister by taking her 3 kids for about an hour, not showering, making gifts that still aren't done... it was nuts). I needed some food for my soul yesterday and here it is!!! Enjoy!!!

Famous Zucchini Soup

The real recipe with what I do in parentheses:

1 1/2 lbs. ground beef (I never put this in, but you can and it is delish with it. I have put in soaked wheat to mimic the feel of hamburger and it was a success as well, but usually I never bother with any of these options and just start by sauteing the celery in a little water.)

2 C. chopped celery

6-7 C. peeled and chopped zucchini (I do 7 C and never peel it. I also just slice it, not chop it)

1 1/2 C. onions or 6 TB. dried onion

28 oz. can diced tomatoes

1 large can V-8 juice (absolutely essential – do not substitute tomato juice!)

2 tsp. salt

1 tsp. Italian seasoning

1 tsp. oregano

1/2 tsp. basil (I always do a heaping tsp. – we love basil!)

1/2 tsp. garlic powder

2 green peppers chopped

Shredded Parmesan or mozzarella (I use Parmesan)

1. Brown hamburger
2. Add celery and cook for 10 minutes
3. Add everything else except green peppers and Parmesan and cook for 20 minutes
4. Add green peppers and cook for 5 more minutes.
5. Add cheese and serve

I cut this recipe in half as I knew I would be the only one eating it and it turned out so great! Thank you Tracy for letting me copy your recipe to my blog!

Ready For Fall!

I don't know about you, but I have had about as much summer as I need! Just the fact that those words are coming out of my mouth is going to haunt me this winter when it seems like the sun will never come out! Living in North Idaho, the winters last from November to around April sometimes. So I'm sure I am going to look back on this and kick myself! However, one thing that is good about summer is that our garden is doing really well, the bad thing is is that we have more veggies than we know what to do with and I can't keep up! Plus with it being so warm out, I haven't been able to bake them into all the lovely, wonderful goodies that all remind me of fall. So today I shredded up a bunch of zucchini to freeze and also made some Zucchini Bread. It freezes really well and I made them into muffins too so I can freeze those and take them out when my daughter wants something other than cereal or oatmeal for breakfast. Here is the recipe that I used and it turned out AWESOME! My house smells like a bakery and I love it!

Ingredients:
3 Cups Flour
1 teaspoon Salt
1 teaspoon Baking Powder
1 teaspoon Baking Soda
3 teaspoons Cinnamon
3 Eggs
1 Cup Vegetable Oil
2 1/4 Cups White Sugar
3 teaspoons Vanilla Extract
2 Cups Grated Zucchini

Directions:
1. Grease and flour two 8X4 inch pans. Preheat oven to 325 degrees.
2. Sift flour, salt, baking powder, baking soda and cinnamon together in a bowl.
3. Beat eggs, oil, vanilla and sugar together in a large bowl. Add sifted ingredients to cream mixture, and mix well. Add in zucchini until well combined. Pour into prepared pans.
4. Bake for 40-60 minutes or until a toothpick comes out clean in the center. Let bread cool in the pan for 20 minutes on a cooling rack. Then remove bread from pan to cool completely (which I never do and usually have it gone before this last step.)

And there you have it! Your house will smell so fabulous and it will remind you of a cool day after a tromp through the pumpkin patch! At least it does for me.

UPDATE: This can be converted to muffins as well. This recipe will make one loaf of bread and one pan of 12 muffins. Just adjust your cooking time for the muffins to about 20-30 minutes. Just keep an eye on them and pull them out to cool while the bread continues to cook. Had an email on that one! Enjoy!

Homemade Baby Food Tutorial

Now, just so you all know, I have been working on this post for about a week. I didn't want to give bad information and have someone come back and sue me for making their child sick. So let me just say this now: I am NOT a certified nutritionist, I have NO background in the medical field and I am NOT an expert on fruits and veggies. I am just a stay at home mom, trying to save a few dollars, and feed my family healthy meals on an extremely tight budget. There, now that I have cleared the air, take my tips, do your research as I did, consult your pediatrician as I did, talk to your local produce guy as I did and just use your "Mommy Instincts", you know the little voice in your head that says, this may not work for me or my child.

Now this tutorial is pretty basic, but I did two different foods. I made pears and carrots. With summer here, the cost of produce is extremely cheap as everything is in season right now. We were spending anywhere from $40-$80 a month on baby food alone for our little man, (he eats like a horse! I'm a little nervous about what he's going to be like as a teenager!) So all of the food that I have made, I have done so for under $20! I have enough food to last us until the end of September or longer. Most of the food I have made were grown in my mother-in-law's garden, so those were free.

Pears:

As pears are a fairly tender fruit there was really no preparation with them. Just wash and cut them into chunks and put in the food processor (if you are lucky) or blender (if you aren't.) The blender works fine though, just their little motors give out fast if you put too much in at a time.
*Wash Your Fruit Thoroughly

*Cut into Chunks
*Cut out the centers as they can be tough where the seeds are
*Put in your blender/food processor 2 cups at a time

*Add formula or breast milk an ounce at a time and blend until it is the desired consistency (For Stage 1 babies, you will want it pretty soupy, but for Stage 2 babies, you will want it not as soupy, just work with it and you can always add rice cereal to it when you are preparing for baby to eat to thicken it up.)

*Pour food into ice cube trays, cover and freeze! Its that easy!

(This is 3 pears worth!)

This method works well with soft fruits such as pears, bananas, peaches, plums, blueberries, strawberries (pretty much all the berries, but you don't want to do straight berries as it will be too acidic for babies tummies and might cause issues... the messy kind!)

You don't have to add any kind of sweetener as it is not recommended. Never use things such as molasses or honey as there is this not so fun thing called botulism and babies can get it from both honey and molasses. If your fruit is a little tart, like the peaches, add just a very small amount of baby apple juice to your mix. With applesauce I added a little bit of sugar and cinnamon but not enough for it to cause any problems, but that is not a good idea for Stage 1 babies. As my son is 7 months now, he is ok for a little bit of spices. Check with your pediatrician to see what they recommend for sweetener, especially if your baby has a sensitive stomach.

Carrots:

Rule of thumb: Anything that is crunchy, it needs to be steamed first. The main ones are carrots and apples. I peel my carrots as the outside layer is what makes them a little bitter, but you really don't have to. We got a 10lb bag of carrots at Costco for $3.99!! I have enough carrot baby food to last for months, but my boy would be orange if I let him eat it every day.
*Peel Your Carrots

*Chop into Chunks
*Put in a pot of enough water to just barely cover your carrots.
*Put on Med to Low heat (this way if you have to take care of something else you aren't over cooking them if you are gone for a little while.) Cooking time will vary! It depends on how much is in the pot, what temp you put it on, how much water is in there, lots of things. So just keep an eye on it, once the veggie is tender they are ready.
*Take out, put in blender/food processor 2 cups at a time
*Add an ounce of formula or breast milk at a time until it is the right consistency.
*Put in ice cube trays and cover to freeze.

(This is not even half of the 10lb bag made up! 5 full ice cube trays worth!)

How to Reheat:
1 Cube = 1 Serving for Stage 1 Babies. 2 Cubes= 1 Serving for Stage 2 Babies. Now everything that I read said not to microwave when reheating your food, but honestly, when your child is screaming like he is wasting away, its really your only option. Just make sure to stir a lot. Now again, cooking time will vary as some of you might have a better microwave than I do, but I start off with putting my cubes in microwave safe bowls and heating them for 1 minute, as I do 2 cubes in each bowl it takes a little longer, with Stage 1 babies you will want to start with 30 seconds and then go in 20 second increments after that, stirring constantly. After my one minute I stir it, the fruit usually takes less time to cook so I stir them both and put them in for another 20 seconds. The fruit is done but the veggies need more time, so I do another 20 seconds. Play with it, make sure that it isn't too hot. If it is, add a little cool water to your bowl and a little cereal to thicken it up again. Remember to stir constantly and again, don't over cook because if you scorch your food it will lose all nutrients, so heat it slowly.

Try different variations, we mixed the pears and bananas as my son decided he doesn't like bananas anymore, but he loves them now!

Tips:
*Don't add butter to your mix, your baby cannot process extra fats like that, and your food doesn't need it.
*Never give unripe fruit or veggies. If your bananas are green, wait a few days. If you are not sure about how ripe your produce is, make friends with your produce guy, mine's name is Joe.
*If your baby is refusing to drink formula/breast milk, add a little extra in with the food.
*Introduce a new food every 3 days to make sure your babies stomach doesn't react to what you are feeding him. (That was from our pediatrician.)
*Do your research. I used every source I could before doing this. Yes, my motivation was to save money, but I didn't want to be giving my child anything that would hurt him. I talked to our pediatrician extensively on this and she told me it was actually better to make the food than to buy it as there are no preservatives.
*Use frozen veggies over canned veggies. They are better for you and not packed with preservatives and water.
*You don't have to go organic, but it is a good idea. If you trust your produce section and they have locally grown stuff then go with that.

I hope this helps and have fun with it. My little boy just loves most of the foods I have made for him. We have a stock pile of squash/zucchini, pears, apples, peaches, green beans, peas, carrots and bananas. It may take a little more time, but knowing that he is eating fresh stuff makes me feel better. Plus, he has always had a very sensitive stomach and gets constipated easily (I know, T.M.I.) but now, he has no issues at all. Makes me happy. And he is happier too! See~

Death by Cheese and Noodles!

Today was one of those, "I just want to be a slug," kind of day. Yes I got a shower and the kids didn't stay in Jammie's all day, but I am still sore from weeding the garden on Wednesday (my back is still killing me.) So what do you do when you aren't feeling real great? You make comfort food! This is the easiest recipe for Tuna Noodle Casserole you will ever see! I made it a lot when I was pregnant with baby #2 (thank you honey for eating it at least once or twice a week! Dang pregnancy cravings!)

Now you won't see many recipes on my blog for a few reasons.
#1 I don't really know what I'm doing in the kitchen and don't pretend like I do!
#2 I have very picky tastes so I don't venture out very often.
But this is one of those meals that is super cheap, you normally have all the ingredients on hand all the time and it is ready in under 30 minutes! Can't go wrong with that!

Here is what you need:
1lb Bag of Noodles (any kind, the spiral ones are my favorite, but you can use whatever you have on hand.
1 Can of Cream of Mushroom Soup
1 Can of Tuna
1 Cup of Mayo
1 Cup of Sour Cream
A few good squirts of Lemon Juice (roughly a tablespoon or two, not too much though)
2 Cups of Cheddar Cheese (divided)

Cook the package of noodles as directed. Preheat oven at 400 degrees. In a separate bowl combine the rest of the ingredients, using only half of the cheese. Once the noodles are done and drained, mix all of the noodles and sauce together. Dump into a casserole dish (13"X9" is what I use) and then put the rest of the cheese onto. You may want more cheese on the top, just put however much you want on there. Cook for 20 minutes, or until the cheese is melted. Super easy, super good (not so healthy, but what comfort food is?!)

Pop in a good movie and curl up on the couch and enjoy. We watched Princess Bride, I love that movie! "Anybody want a peanut?" So try this and tell me what you think. Enjoy!
